    Orange Salad from Mani

    I never imagined that i could have orange as a salad but apparently there is a part of Greece where this kind of salad is quite common.

    Last summer i went for holidays in one really beautiful part of Greece, in the south east side of Peloponissos in the Sout Greece, called Mani. That area of Greece is most well know for the city of Sparti and history it holds but there are many more beautiful cities next to it.

    I did had the opportunity to drive in many cities around the Peninsula during that summer but i think Areopolis was one of the best ones to spend some days and eat in there local taverns

    The area is know for producing really high quality olives, and olive oil but also …oranges!

    INGREDIENTS FOR ORANGE SALAD

    • 2 ORANGES CUT AND SLICED
    • 1 ONION SLICED
    • COUPLE OF OLIVES
    • OLIVE
    • CAPER LEAVES
    • SALT

    Clean carefully the oranges removing there cover and cut them in slices. Place them in nice deep plate and the sliced onion and olives.

    Sprinkle with some olives, the caper leaves and add salt to your liking.

    Lentil Salad with mustard sauce

    Making a salad is never something that excited me a lot. Up until couple of years ago i always thought that salads should only be used as a part of a full meal rather than the main course.

    All those things changed slowly and i have included a variety of salads to my diet. One of those that i do regurarly is the following which i am really proud of.

    You see not only its quite healthy but the sauce has two of favourite ingredients. Mustard and Balsamic!

    Ingredients: Lentil Salad with Mustard Sauce

    • 1 cup of Lentils
    • 1 red onion finely cut
    • 1 small bunch of parsley
    • 2 cloved of garlic
    • 1 green pepper sliced
    • 2 teaspoons of olive oil
    • 3 teaspoons of balsamic
    • 2 small spoons of dijon or wholegrain mustard

    Nothing too fancy about it.  Try to boil the lentils really good and drain them when they are ready.

    In a bowl make the sauce and mix everything together. Leave them in the fridge for 30 mins and its ready to serve.

    Oven Aubergines

    Couple of day ago I was talking with my dad who reminded me how much he liked to try different recipes that include aubergines which is I think a characteristic ingredient in Greek, Turkish and in general middle east kitchen.

    Looking back on the recipes I have done, I can find a lot that include aubergines and most probably I can think couple also that I haven’t even tried to cook until now. The following reminds a lot of the aubergine salad I did some time ago but it is a nice idea, especially if you are having a barbeque and you want something to have together with the meat you are grilling.
