Is it a Salad? Is it a main course?…Is it just tasty?  Most probably yes, to all of the previous questions.

I am not posting regurarly in the last few months i know and it is for a reason.  I do have a lot of different issues that are taking a lot of my time. Either way i think, its time to blog about something new.

Years ago, after university, when i got my first job i remember a friend of mine introducing me to rocket leaves as a basic ingredient for making sandwhiches on our lunch.  My first reaction when i tried rocket leaves was not so … nice to be honest. The taste was too sour for me but… combining it with other ingredients brings it to whole new different level.

So, if you combine rocket leaves, with balsamic and you add a bit of pork…well then you have yourself something interesting cooking.

INGREDIENTS

  • Olive Oil
  • 4 garlic cloves
  • 500gr -750gr pork sliced
  • Around 10 small potatoes cut in big pieces.
  • 1 big red onion sliced
  • 2-3 slices of prosciuto
  • Rocket leaves
  • 2 table spoons of balsamic
  • 1 english mustard
  • Salt Pepper and any other seasonic you like.

So, it may look really complicated, but it is not. In fact its one of the easiest dishes i have ever made and one that with a little effort can be presented as if it was made from a World class chef.

Take a big pot and boil for 10-20 minutes the potatoes and the onion wedges.  When they are done, place them in a big baking tray and bake them for another 25 minutes making sure you turn them occasionally.

Oops, i forgot! Make sure you have pre-heated the oven in around 190c

In the same time, take a frying pan, add a bit of olive oil and throw in there the big pieces of sliced pork you have. Add salt and pepper and cook for 2-3 minutes making sure its brown from all sides. When you are done, add them to the baking tray together with the  potatoes.

Next thing you need, is to make the dressing. Easy peasy!

Take a glass, add 2-3 table spoons of olive oil, mustard, balsamic and salt with pepper…shake really well and you are ready! When you are ready to serve, you need to place the rocket in a plate and divide the potatoes and onions equally. Adding obviously as much pork as you need and the slice of prosciutto on top.  Drizzle with the balsamic dressing and you are ready to go!
