Salmon with lentils is not something that is uncommon. However, adding spinach and wholegrain mustard gives a bit of an edge in my opinion.
During the pandemic i managed to cook -like many others i guess- all the recipes that i could. It was for certain that sometimes i would have to experiment with new things. Spinach and lentils mixed with salmon was something that i have heard before but what about adding some mustard?
Well, i can guaranted you that the following dressing is zesty and vibrant with freshly grilled salmon rested on top. Bear in mind that there are other variations possible. You could have that recipe with a pan seared salmon but in my opinion it is much easier when you leave them in the oven to grill and focus on the lentils and spinach. Also, for this case i had a salmon steak and not a fillet which makes more sense to grill or place it in the oven for me.
You can make it as spicy as you want or mix it differently. I think the main elements of this dish are salmon and lentils, all the rest can be adjusted as you would like.
You can use whatever spinach you like, but in case it is frozen spinach, you need to adjust the times a bit. Frozen spinach with have more juices and you need until it evaporates.As said before, there are many variations to this plate.

Salmon with lentils, spinach and wholegrain mustard recipe
- 300gr of lentils
- 2 salmon fillets
- 2 teaspoons of wholegrain mustard
- 2 bay leaves
- 500grs of spinach
- garlic
- lemon juice
- olive oil
- onions
Lets start!
Put the lentils to boil in plenty of water with the 2 bay leaves. Boil them until soft, but not completely (they should hold a little), for about 20 – 25 minutes. Drain them and discard the bay leaves. Put them in a bowl, and leave them there for now.
Let’s make our dressing now. In a bowl, add olive oil, lemon and wholegrain mustard. Always test and adjust the ingredients accordingly.
As you are making the lentils, you should prepare the salmon fillets. Season the salmon with salt and sprinkle it with some olive oil. I like to put it straight to the oven and grill it while adding just a little bit of lemon on top. As the salmon is cooking we are moving on to prepare our spinach and mix it with lentils.
Saute the onion for a few minutes until softened and then add the garlic for a further minute. Add the spinach to the pan and wilt by turning it every few seconds with some kitchen tongs.
Take the lentils and add to the pan with the onion and spinach. Pour over the dressing and season well. Stir everything together so the dressing evenly coats the mixture. Lastly, in a big plate, take a big spoon into the middle and add the cooked salmon on the top. Add some lemon and serve immediately.
