One of the first things that you think about pasta is … italy. Well, yeah you are right it is not really greek food to be honest but… who cares? Adding sardines and capers give pasta a proper meditterenean and greek flavor.
I love pasta to be honest as it is easy to make and the basic ingredient that you can mix wii a variety of ingredients.
Capers are my favourite but sardines? I rarely use them… which I regret.Sardines are incredible healthy and really tasty which it makes you wonder why we don’t use them more in our every day diet.
Ingredients for Linguini with Sardines
- 400g linguini
- 1 tbsp olive oil
- 2 garlic cloves, crushed
- pinch chilli flakes
- 227g can chopped tomato
- 2 x 95g cans skinless and boneless sardines
- 1 can of tomato sauce
- 100g pitted black olives, roughly chopped
- 1 tbsp capers, drained
- 1 small handful of oregano
Start cooking you spaghetti according to instructions. In the meantime start making the sauce.In a deep pan add some olive oil and heat it in medium heat. Add the garlic and then the chilli flakes for two minutes.Continue by adding the tomato sauce, sardines, and capers while you stir all the time breaking up a bit the sardines in the same time.
Add salt and pepper to your liking and some oregano. Ready to go! Serve together with pasta sprinkeling a bit with olive oil on top.
