When you think about Greece there are many things that come to your mind. You picture the sun, beautiful beaches and really nice blue waters that are inviting you to dive in.   Obviously its the food that will always be in your mind and Acropolis, the islands and many many more…

Most of the times people also picture in there heads some old grandfathers sitting in the square drinking there greek coffee and staring by the passers by and it will be absolutely true. You know about the mentality of the Greeks and you have heard about the greek coffee but not sure if you have know about the sweet that many times Greeks have together with the coffee. What is called “gliko tou koutaliou” (spoon sweet) in Greece are sweets that are served in Greece (but also in Balkans) and can be made from almost any fruit, though sour and bitter fruits are especially prized.

I do remember my father having one usually with his coffee but also my grandfather after having there lunch time naps..  So as i had the pleasure to try some in my recent vacations in Tilos and Nisyros in Greece, i thought to write down an easy way to make them  on your own if you would like to .

Firstly we need to get grapes without stones inside them. If they have then we need to remove them after we wash them thoroughly.For one kilo grape requires 1 kilogram sugar. We take a nice big deep pot put the grapes and then pour the sugar to cover them all .

Let them over there for the night.  In the morning of the next day the grapes should have removed there liquids. In that way we dont need to add more water and we begin to boil them. You will notice that as you boil them, the grapes will remove more liquids.

When spent about half an hour, pour the juice from half a lemon (a lemon helps to clot jam’s and the sweets) and throw a little vanilla aroma. Now because the grape as we said have a lot of water you might end up with lots of water in the pot. Drain it a bit in this case or remove the grapes and boil the syrup now to be reduced.

We have placed in before in a pot with cold water our vases where we will place our sweet grapes and we boil them for sterilisation.  When we finish, we add the grapes in each one of them and add the syrup to fill it up if its needed!
